In this marginal, northerly wine producing region, the risks and rewards can be extreme as can be seen from this sensational wine.

Almost " raw" in his approach, Francois Xavier takes the wine straight from fermentation to Amphora pots where the wine can breath, allowing the often hefty tannins to soften before transferring the wine to old oak barrels. This in turn allows the wine to mellow whilst maintaining its incredible lush fruit intensity  not often seen in this pure form.

A real one off and a real find.

Made in tiny quantities, annual production is just 2500 bottles.
